When the fruit is eaten, miraculin binds to the taste buds on the tongue and temporarily modifies how sour foods are perceived. After consuming the berry, acidic or sour foods like lemons and limes taste sweet instead of sour. This effect happens because miraculin interacts with taste receptors differently depending on pH levels—activating sweet receptors in acidic conditions.
