Aromatic kaffir lime (Citrus hystrix), also known as Thai or kieffer lime, is a member of the citrus family valued for its glossy green foliage, wrinkled fruits, and strong citrus aroma. It is widely used in Thai, Indonesian, and Cambodian cuisine, where its leaves, zest, juice, and rind add a distinctive lemony-spicy flavor to a variety of dishes. Young kaffir lime leaves can be finely shredded and used in salads, while mature leaves are commonly torn or added whole to curries, soups, stir-fries, and other recipes.
