It is widely used in Thai, Indonesian, and Cambodian cuisine, where its leaves, zest, juice, and rind add a distinctive lemony-spicy flavor to a variety of dishes. Young kaffir lime leaves can be finely shredded and used in salads, while mature leaves are commonly torn or added whole to curries, soups, stir-fries, and other recipes.
